CHOLESTEROL
Cholesterol is often portrayed as an evil compound, but it serves many important roles as it is the starting point for the manufacture of many hormones and bile acids, and serves as an important component of cell membranes as well. While the liver is the major source of blood cholesterol, it may turn out that the level of saturated fats in our food is more relevant than the cholesterol content. This opinion is supported by a statistical analysis or 224 dietary studies carried out over the past twenty-five years that investigated the relationship between diet and blood cholesterol levels in more than 8,000 subjects. What investigators found was that saturated fat in the diet not dietary cholesterol, is what influences blood cholesterol levels the most.
